Tonight we’re having Chicken and Potatos with a little rice. Through out the day I kept thinking of twiced baked potatos, and thought how nice that would be. Thing is everytime I make them they turn out like crap. Not sure why but they do. My mash potatos always come out pretty good, so I thought why not put the mash potatos into a cupcake tin and bake them. Im not sure if this is a good idea, but im going to try it anyway.
I’ll finish this post when there done and let you know they turned out.

We had the Potato Cakes, and to be quite honest it was a failure. They didnt bake very well, they more or less just turned into puddles of mush. There’s probably a better way to do this, but im just not sure what it is yet.
If I figure it out, i’ll be sure to let you know. I think a Potato Cake would be awesome!!!
